Sustainability often gets talked about in the future tense. Goals for 2030. Targets for 2050. But on January 13, at the Danish Ocean Cluster’s Innovation Day in Frederikshavn, we wanted to talk about what’s happening right now.
Standing alongside our partner Hailia Nordic Oy, we showed how processing machinery and culinary science come together to solve the yield challenge in fish processing.
Using our RDT technology, Hailia has figured out how to turn fish sidestreams into high-quality, texturized food that is ready for consumers. And this is not a pilot project. With eight products already on shelves in Finnish retail and wholesale markets, the commercial viability is proven.
For food manufacturers, the math is hard to ignore. Standard fish processing yields sit around 70%. With this approach, we are seeing that number climb to 90% and above.
The partnership works because each side brings something different.
We provide the machinery and equipment. Hailia focuses on the science behind turning sidestreams into consumer-ready products, developing new recipes that processors can put to work.
